How to make Pepper Steak


4 beef steaks

1 tablespoon of coarse salt

3 tablespoons whole pepper

1 tablespoon vegetable oil

1/3 cup shallots, chopped

1/2 stick unsalted butter

1/2 cup cognac

3/4 cups cream


Preheat oven to 100 degrees Celsius.

In a bag, hammer the pepper to crack it and place the four fillets in it and salt to taste. (the fillets are covered with pepper).

Heat a large frying pan and add the vegetable oil. Sear the fillets for about 3 minutes on each side.

Place the fillets on a baking sheet and keep warm in the oven while you cook the sauce.

In the skillet where you cooked the steaks, add the shallots and butter. Cook for 3-5 minutes or until the shallots are golden brown.

Add the cognac and allow the sauce to boil, and reduce to a glaze (approx. 3 minutes).

Add cream and cook for 2-3 minutes more. Remove the fillets from the oven.
